Yoly Lazo, a chef from Puerto Rico, has been in charge of bringing Puerto Rican delicacies to Walt Disney World for 14 years. She has created popular desserts like quesito and flancocho, as well as the renowned coquito season at Christmas.
The Yabucoan woman’s goal is to provide new and distinctive flavors to tourists by placing these delicacies on the menu of one of the most popular destinations on earth. She discusses the response people get when they try the Puerto Rican dessert.

Puerto Ricans make up the majority of the population in Orlando, and many of them are pleased to be at a place as large as Disney where there are no Latinos and Puerto Rican food when they come to visit us in the parks, she said.
Before relocating to Orlando in 1994, Lazo attended the University of Puerto Rico’s Humacao campus to study electronics. He was on vacation in central Florida, but after finding a job as a dishwasher at Disney, he never went back to Puerto Rico.

But after a chef asked her if she wanted to learn to cook, her career at the company really took off.
She first worked as a pizza maker before training as a chef and pastry chef, which allowed her to represent the business in nations like China and Japan.
She also worked at Epcot and Disney’s Boardwalk Resort at Walt Disney World, where she revamped all of the restaurant’s desserts.
